Most sailings designate one or two evenings. The enhanced dress code applies mainly to the main dining room and certain venues, and lines phrase it differently: formal, elegant, chic. Participating fully is a choice; meeting a venue's minimum standard to eat there is not, and some lines do enforce that minimum at the door.
The practical version: pack one evening outfit that satisfies your line's minimum dining-room standard, check how your line words the evening, and decide onboard how far past the minimum you feel like going. The buffet and casual venues are the standing alternative on the mainstream lines.
